Strawberry Cream Dessert Cups

This chilled strawberry cream dessert layers softened fruit with a whipped cream-cheese mixture and optional graham or cookie crumbs. The strawberries are cooked briefly with a sugar substitute, then cooled before the cups are assembled.

Ingredients

  • 2 cups chopped strawberries
  • 1/4 cup sugar substitute
  • 8 ounces non-fat cream cheese
  • 1 cup non-fat whipped cream
  • 1 teaspoon vanilla
  • Crushed graham crackers or cookie crumbs, optional

Cook, Layer, and Chill

  1. Place the chopped strawberries and sugar substitute in a pan.
  2. Cook until the strawberries are soft, then set the fruit aside to cool.
  3. Whip the cream cheese with the vanilla and whipped cream until evenly combined.
  4. Layer the cream mixture, cooled strawberries, and optional crumbs in cups.
  5. Chill for 2 hours before serving.

Timing and Assembly

Prep time is 15 minutes, chill time is 2 hours, and the recipe makes 6 servings. Make sure the cooked strawberries have cooled before placing them against the whipped layer so the cream keeps its texture.

Divide the fruit and cream evenly among the cups. If using crumbs, add them as a distinct layer or sprinkle them on top shortly before serving.
