Applesauce Cocoa Brownies

Applesauce and egg whites add moisture to these simple cocoa brownies. The 8-inch pan makes 16 two-inch squares.

Ingredients

  • ¾ cup all-purpose flour
  • ¼ cup plus 2 tablespoons unsweetened cocoa powder
  • ¾ cup Splenda
  • ¼ teaspoon salt
  • ⅓ cup unsweetened applesauce
  • 3 egg whites
  • 1 teaspoon vanilla extract
  • Nonstick cooking spray

Instructions

  1. Preheat the oven to 350°F. Coat an 8×8-inch baking pan with nonstick cooking spray.
  2. Combine the flour, cocoa powder, Splenda, and salt.
  3. Stir in the applesauce, egg whites, and vanilla.
  4. Spoon the batter into the prepared pan and spread it evenly.
  5. Bake for 20–25 minutes, until the edges are firm, the center is just set with no wet batter, and the center reaches 160°F (71°C).
  6. Cool before cutting into 16 two-inch squares.

Makes 16 brownies.
