These savory chicken wraps combine strips of chicken, spinach, and two cheeses with a warm Greek-yogurt garlic sauce. The filling is prepared in one skillet, then divided among four whole-wheat wraps for a meal that takes about 25 minutes from start to finish.
Ingredients
- 2 chicken breasts, sliced into thin strips
- 4 whole-wheat wraps or tortillas
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1/2 cup Greek yogurt
- 1/4 cup chicken broth
- 1/4 cup reduced-fat grated Parmesan cheese
- Salt and pepper, to taste
- 1/2 cup fresh spinach
- 1/2 cup reduced-fat shredded mozzarella cheese
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon lemon juice
Directions
- Heat the olive oil in a skillet over medium heat. Add the chicken strips, season with salt and pepper, and cook for 5–7 minutes until golden and cooked through. Chicken should reach 165°F (74°C). Remove it from the skillet and set aside.
- In the same skillet, sauté the garlic for 1–2 minutes, until fragrant.
- Add the Greek yogurt, chicken broth, and Parmesan. Stir well and simmer for 3–4 minutes, until the sauce thickens slightly.
- Return the chicken to the skillet and coat it in the sauce. Add the spinach and cook for another 2–3 minutes, until wilted.
- Stir in the lemon juice, then top with mozzarella and parsley.
- Divide the garlic chicken among the wraps. Roll tightly, cut each in half, and serve immediately.
