Savory Chicken Wraps with Garlic Sauce

These savory chicken wraps combine strips of chicken, spinach, and two cheeses with a warm Greek-yogurt garlic sauce. The filling is prepared in one skillet, then divided among four whole-wheat wraps for a meal that takes about 25 minutes from start to finish.

Ingredients

  • 2 chicken breasts, sliced into thin strips
  • 4 whole-wheat wraps or tortillas
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/2 cup Greek yogurt
  • 1/4 cup chicken broth
  • 1/4 cup reduced-fat grated Parmesan cheese
  • Salt and pepper, to taste
  • 1/2 cup fresh spinach
  • 1/2 cup reduced-fat shredded mozzarella cheese
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice

Directions

  1. Heat the olive oil in a skillet over medium heat. Add the chicken strips, season with salt and pepper, and cook for 5–7 minutes until golden and cooked through. Chicken should reach 165°F (74°C). Remove it from the skillet and set aside.
  2. In the same skillet, sauté the garlic for 1–2 minutes, until fragrant.
  3. Add the Greek yogurt, chicken broth, and Parmesan. Stir well and simmer for 3–4 minutes, until the sauce thickens slightly.
  4. Return the chicken to the skillet and coat it in the sauce. Add the spinach and cook for another 2–3 minutes, until wilted.
  5. Stir in the lemon juice, then top with mozzarella and parsley.
  6. Divide the garlic chicken among the wraps. Roll tightly, cut each in half, and serve immediately.

Timing: 10 minutes prep, 15 minutes cooking, 25 minutes total. Servings: 4.
