Ingredients:
2 cups cooked shredded chicken (grilled or baked with olive oil and herbs)
1 ripe avocado, diced
2 tbsp plain Greek yogurt
1 tbsp extra virgin olive oil
Juice of 1/2 lemon
1/4 cup chopped cucumber
1/4 cup diced cherry tomatoes
2 tbsp chopped fresh parsley or mint
Whole grain wraps
Instructions:
In a bowl, mix chicken, avocado, cucumber, tomatoes, and herbs.
In a small bowl, whisk Greek yogurt, olive oil, and lemon juice for a light dressing.
Pour dressing over the chicken mixture and toss gently.
Spoon into whole grain wraps and roll tightly.
Serve fresh or grill lightly for a warm version.
