Ingredients:
• 1 cup Greek yogurt
• 2 eggs
• ½ cup almond flour
• ½ tsp baking powder
• 1 tbsp lemon zest
• ½ cup blueberries

Instructions:
• Mix yogurt, eggs, zest. Stir in almond flour and baking powder.
• Fold in blueberries.
• Scoop into mini muffin tin or small molds.
• Bake at 375°F (190°C) for 8–10 min or until golden and puffed.
