Chocolate Cottage Cheese Mousse

This chocolate cottage cheese mousse turns a short ingredient list into a cool, creamy dessert. Cottage cheese gives the mixture its body, while cocoa, vanilla, and a pinch of salt create a deep chocolate flavor. The finished mousse needs only 30 minutes in the refrigerator, so it is easy to prepare before dinner.

Ingredients

  • 1 cup non-fat cottage cheese
  • 2–3 tablespoons unsweetened cocoa powder
  • 2–3 tablespoons low-carb sweetener, such as erythritol or stevia, adjusted to taste
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Optional: sugar-free chocolate chips or nuts, for garnish

How to make the mousse

  1. Place the cottage cheese, cocoa powder, sweetener, vanilla extract, and salt in a blender or food processor.
  2. Blend until the mixture is smooth and creamy. Stop and scrape down the sides if needed so no cottage cheese curds remain.
  3. Taste the mousse, then adjust the cocoa powder or sweetener within the listed ranges to suit your preference. Blend again briefly after any adjustment.
  4. Transfer the mousse to serving dishes and refrigerate for at least 30 minutes so it can chill and firm.
  5. Before serving, add sugar-free chocolate chips or nuts if desired.

For the smoothest texture, give the blender enough time to fully process the cottage cheese. The mousse can be served plain for a simple chocolate finish, or topped just before serving so nuts and chocolate chips retain their texture.
