Ingredients:

5 eggs

3/4 cup chopped ham

1/2 cup reduced-fat cottage cheese

1/2 cup reduced-fat shredded Swiss cheese

1/4 cup diced red bell pepper

1/4 tsp garlic powder

Pinch of nutmeg

Directions:

Preheat oven to 350°F (175°C). Lightly spray an 8-inch round baking pan.

Beat eggs in a mixing bowl. Add cottage cheese and mix until smooth.

Stir in ham, Swiss cheese, bell pepper, garlic powder, and nutmeg.

Pour into prepared pan and smooth the top.

Bake for 35–40 minutes or until set and golden brown.

Cool for 5 minutes before slicing. Enjoy warm!
