Crustless Ham Quiche

This crustless ham quiche combines eggs with cottage cheese, Swiss cheese, red bell pepper, garlic powder, and nutmeg. It bakes in an 8-inch round pan and rests briefly before slicing.

Ingredients

  • 5 eggs
  • ¾ cup chopped ham
  • ½ cup reduced-fat cottage cheese
  • ½ cup reduced-fat shredded Swiss cheese
  • ¼ cup diced red bell pepper
  • ¼ teaspoon garlic powder
  • Pinch of nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly spray an 8-inch round baking pan.
  2. Beat the eggs in a mixing bowl. Add the cottage cheese and mix until smooth.
  3. Stir in the chopped ham, shredded Swiss cheese, diced red bell pepper, garlic powder, and nutmeg.
  4. Pour the mixture into the prepared pan and smooth the top.
  5. Bake for 35–40 minutes, until the center is set and the top is golden brown. Check the center with a food thermometer; an egg dish should reach 160°F (71°C).
  6. Cool for 5 minutes before slicing. Serve warm.

Preparation Notes

Dice the ham and bell pepper into small pieces so they remain distributed through the egg mixture. Stir the fillings in after the cottage cheese has been blended with the eggs, then scrape the bowl into the pan so the ham and cheese do not remain at the bottom.

Cut the quiche into portions suited to the meal. Refrigerate leftovers promptly in a covered container.
