No-Bake Chocolate Coconut Energy Bites

Rolled oats, coconut, cocoa, and nut butter make these no-bake chocolate bites. Optional mini chocolate chips or chia seeds can be mixed in before the one-tablespoon portions are rolled and chilled.

Ingredients

  • 1 cup rolled oats
  • ½ cup shredded coconut
  • 2 tablespoons cocoa powder
  • ½ cup peanut butter or almond butter
  • ⅓ cup sugar substitute
  • ½ teaspoon vanilla extract
  • A pinch of salt
  • ¼ cup mini chocolate chips or chia seeds, optional

Mix, Roll, and Chill

  1. Combine the oats, shredded coconut, cocoa powder, salt, and any optional add-ins in a large bowl.
  2. Add the peanut butter or almond butter, sugar substitute, and vanilla. Mix until fully combined.
  3. If the mixture is too dry to hold together, add a splash of milk or a little more nut butter.
  4. Scoop about one tablespoon at a time and roll it into a ball. Continue until all the mixture is used.
  5. Arrange the bites on a tray or plate and refrigerate for 20–30 minutes to firm.

Judge the Mixture Before Adjusting

Stir the nut butter first if its oils have separated. Mix thoroughly before adding the source’s optional splash of milk or extra nut butter; the oats need time to become evenly coated. Add only enough to make the mixture hold when pressed.

Store the firm bites in an airtight container in the refrigerator for up to one week, as the original recipe directs.
