Ingredients:

1 cup rolled oats

1/2 cup shredded coconut

2 tablespoons cocoa powder

1/2 cup peanut butter (or almond butter)

1/3 cup sugar substitute

1/2 teaspoon vanilla extract

A pinch of salt

Optional: 1/4 cup mini chocolate chips or chia seeds

Instructions:

1. Mix the Ingredients:

In a large bowl, combine oats, shredded coconut, cocoa powder, salt, and any optional add-ins (like chocolate chips or chia seeds).

2. Add Wet Ingredients:

Add peanut butter, sugar substitute, and vanilla extract. Mix until everything is fully combined. If the mixture feels too dry, add a splash of milk or a bit more nut butter.

3. Roll into Bites:

Scoop out about 1 tablespoon of the mixture and roll into a ball using your hands. Repeat until all the mixture is used.

4. Chill & Store:

Place the bites on a tray or plate and refrigerate for 20–30 minutes to firm up. Store in an airtight container in the fridge for up to a week.
