These skillet patties combine steamed broccoli with cheddar, eggs, flour, breadcrumbs, garlic, and green onions. Each patty uses about two tablespoons of mixture.
Ingredients
- 1 large head broccoli, cut into florets
- 1 cup shredded cheddar cheese
- 2 large eggs
- ½ cup all-purpose flour
- ¼ cup breadcrumbs
- 2 garlic cloves, minced
- ¼ cup finely chopped green onions
- Salt and pepper, to taste
- A few tablespoons olive oil, for frying
Instructions
- Steam the broccoli for 5–7 minutes, until tender.
- Drain, cool slightly, and chop finely.
- Mix the broccoli, cheddar, eggs, flour, breadcrumbs, garlic, green onions, salt, and pepper.
- Heat a few tablespoons of olive oil in a skillet over medium heat.
- Form about 2 tablespoons of mixture into each patty.
- Fry for 3–4 minutes per side, until golden and crisp. Check that the center reaches 160°F (71°C).
- Drain on paper towels and serve warm with a dipping sauce.
Shaping Notes
Drain the broccoli well before chopping so excess water does not loosen the mixture. Keep the patties similar in thickness for even cooking.
