Apple Cinnamon Oat Loaf

Grated apple, oats, dates, cinnamon, and chia seeds bake into a sliceable apple cinnamon oat loaf. Chopped apple finishes the top, while mashed dates add sweetness throughout the mixture.

Ingredients

  • 3 medium Granny Smith apples
  • 6 fresh dates, pitted and chopped
  • 1⅔ cups (150 g) quick oats
  • 1½ tsp baking powder
  • 1½ tsp ground cinnamon
  • 1 tbsp chia seeds
  • 2 medium eggs, lightly beaten

Method

  1. Preheat the oven to 160°C. Line a 10 cm × 20 cm loaf tin with baking paper.
  2. Grate 2½ apples and finely dice the remaining half apple.
  3. Put the chopped dates in a small microwave-safe bowl with 2 tablespoons water. Microwave on High (100%) for one minute, then mash with a fork.
  4. Combine the oats, baking powder, cinnamon, and chia seeds in a large bowl.
  5. Add the lightly beaten eggs, grated apple, and mashed dates. Stir to combine.
  6. Spoon the mixture into the prepared tin and smooth the top.
  7. Sprinkle over the diced apple and press it lightly into the mixture.
  8. Bake for 55 minutes, or until a skewer inserted into the center comes out clean.
  9. Cool in the tin, turn out, and cut into eight slices.

Prepare the Apples Two Ways

Keep the grated apple for the moist interior and reserve the finely diced half for the top, as directed. Mash the microwaved dates while they are warm so they disperse more easily. Before baking, level the mixture and press the diced apple in lightly rather than burying it.
