Ingredients:

3 eggs      

3 cups plain fat-free Greek yogurt

1 small box sugar-free, fat-free cheesecake pudding mix

1 tsp vanilla extract

3 tbsp sugar substitute (e.g. Splenda Monk Fruit)

Instructions:

Preheat oven to 350°F (175°C).

In a mixing bowl, beat eggs, sweetener, and vanilla.

Add yogurt and pudding mix; beat until smooth.

Pour into a lightly greased pie dish (Pam works great).

Bake for 30 minutes.

Chill for at least 2 hours, or overnight for best texture.
