Ingredients:

3 slices Canadian bacon (1 point)

1 low-point flour tortilla (like Mission Carb Balance or Ole Xtreme Wellness) – 1 point

2 eggs (0 points).

1/4 cup diced mushrooms

1/4 cup chopped onions

1/4 cup bell peppers, diced

1/4 cup fresh spinach, chopped

Salt & pepper, to taste

Optional: a dash of hot sauce or herbs for extra flavor (0 points)

Directions:

Prep the veggies: Spray a nonstick skillet with cooking spray. Sauté mushrooms, onions, bell pepper, and spinach over medium heat until soft (about 3–4 minutes). Season lightly with salt and pepper.

Add the eggs: Crack in the eggs and scramble with the veggies until fully cooked. Set aside.

Crisp the Canadian bacon: In the same pan, quickly sear the Canadian bacon slices (about 30 seconds per side) until browned.

Assemble: Warm the tortilla briefly (microwave for 10–15 seconds or heat in the pan). Layer with eggs & veggie scramble, then top with Canadian bacon.
