Mashed raspberries bring fresh fruit into the oat base of these chilled chocolate bars. Peanut or almond butter holds the oats together, maple syrup adds sweetness, and melted dark chocolate forms the top layer. Allow about 10 minutes to prepare the mixture and four hours for it to chill; the recipe makes nine servings.
Ingredients
- 1 cup oats
- ¼ cup peanut butter or almond butter
- 2 tbsp maple syrup
- ½ cup mashed raspberries
- ¼ cup melted dark chocolate
Instructions
- Add the oats, peanut butter or almond butter, maple syrup, and mashed raspberries to a bowl.
- Mix until the oats are evenly coated and the berries are distributed throughout.
- Transfer the mixture to a pan and press it into an even layer.
- Spread the melted dark chocolate across the top.
- Chill for four hours.
- Once firm, slice into nine bars and serve.
Layer Chocolate over the Oats
Mash the raspberries first so their juices spread through the oats. If the nut butter has separated, stir it before measuring, then combine until no dry pockets of oats remain.
A lined pan makes the chilled mixture easier to lift out. Compress the oat layer firmly and level the surface before adding the melted chocolate. Let the chocolate flow across the top instead of pressing it into the oats.
Keep the pan chilled for the full four hours before slicing. The bars soften as the chocolate and nut butter warm, so keep them refrigerated until close to serving.
