Cottage Cheese Pancake Bites

These small cottage cheese pancake bites are blended from cottage cheese, eggs, almond flour, baking powder, and cinnamon. The batter is cooked in small rounds, producing bite-size pancakes that can be stacked or served individually.

Ingredients

  • 1/2 cup non-fat cottage cheese
  • 2 eggs
  • 1/4 cup almond flour
  • 1/2 teaspoon baking powder
  • Dash of cinnamon

Instructions

  1. Place the cottage cheese, eggs, almond flour, baking powder, and cinnamon in a blender.
  2. Blend until the batter is smooth, scraping down the sides if needed.
  3. Heat a nonstick skillet.
  4. Scoop the batter into small rounds, leaving enough room to turn them.
  5. Cook for 2–3 minutes per side, until golden and cooked through.

Plan on 5 minutes of prep and 8 minutes of cooking. The recipe makes 10–12 bites. Use small, evenly sized scoops to stay close to that yield and help the pancakes cook at the same rate.

Turning Small Pancakes

Wait until the first side has set enough to lift before sliding a thin spatula underneath. Small rounds are easier to manage than one large pancake because the cottage-cheese batter remains tender.
