Ingredients:
- 2 cans Mexicorn, drained
- 1 can Rotel (regular or hot), drained
- 2 cups reduced-fat shredded sharp cheddar or Colby-Jack blend
- 6–8 green onions, thinly sliced
- ¾ cup Greek yogurt
- 8 oz non-fat sour cream
- 1 small bunch fresh cilantro, finely chopped
- ½ tsp garlic powder
- ½ tsp smoked paprika
- Salt & black pepper to taste
- Optional kick: diced jalapeño or a squeeze of lime juice
Instructions:
- In a large bowl, combine Mexicorn and Rotel.
- Stir in Greek yogurt and sour cream until smooth and creamy.
- Fold in shredded cheese, green onions, cilantro, and seasonings.
- Taste and adjust seasoning or heat as desired.
- Chill for 30 minutes before serving for best flavor.
Serve with tortilla chips, crackers, or fresh veggies.
