Roasted Red Pepper and Feta Flatbread

Roasted red peppers, feta, garlic, and basil top this quick flatbread for two to three servings. A premade flatbread or pizza crust keeps the preparation to 10 minutes, followed by a 12–15-minute bake.

Ingredients

  • 1 premade flatbread or pizza crust
  • 2 large roasted red peppers, sliced
  • 100 grams feta cheese, crumbled
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1 handful fresh basil leaves, torn
  • Salt and pepper, to taste

Directions

  1. Preheat the oven to 400°F (200°C). Place the flatbread on a baking sheet.
  2. Brush the flatbread with the olive oil and distribute the minced garlic evenly over it.
  3. Arrange the roasted red pepper slices across the surface.
  4. Sprinkle the crumbled feta over the peppers.
  5. Bake for 12–15 minutes, until the flatbread is crisp and the cheese is slightly melted.
  6. Remove from the oven and scatter the torn fresh basil over the top.
  7. Season with salt and pepper, slice, and serve warm.

Timing: 10 minutes preparation, 15 minutes cooking, and 25 minutes total. Add the basil after baking so it stays fresh rather than drying in the hot oven.
