Ingredients
– 1 large broccoli, cut into florets
– 2 tablespoons olive oil
– 1 handful of baby kale, chopped
– 1 small onion, diced
– 7 small cloves of garlic, minced
– 12 small tomatoes (cherry or grape tomatoes), halved
– Salt and pepper to taste
– Optional: 1 cup shredded low-fat cheese (Weight Watchers friendly)
# Instructions
1. Preheat oven to 375°F (190°C).
2. In a large skillet, heat olive oil over medium heat. Add onion and garlic; cook until softened (about 5 minutes).
3. Add broccoli, kale, and tomatoes to the skillet. Cook, stirring occasionally, until vegetables are tender (about 10-12 minutes). Season with salt and pepper.
4. Transfer the vegetable mixture to a 9×13-inch baking dish.
5. If using cheese, sprinkle it evenly over the vegetables.
6. Bake for 20-25 minutes or until the casserole is hot and the cheese is melted and bubbly.
