Ingredients:

6 large eggs
1 cup low-fat milk
1/2 cup chopped fresh spinach
1/2 cup diced tomatoes
1/4 cup diced red onion
1/2 cup non-fat shredded mozzarella
Salt and pepper to taste
Olive oil spray

Directions:

Preheat oven to 375°F (190°C). Lightly grease a 9-inch pie dish with olive oil spray. In a large bowl, whisk eggs and milk until smooth. Add chopped spinach, tomatoes, onion, cheese, salt, and pepper. Mix well. Pour mixture into the prepared pie dish.
