Ingredients:

For the Base:

  • 4 large flour tortillas 
  • Oil for frying or spraying (for crisping the tortillas)

For the Filling:

  • 1/2 lb (about 250g) ground beef or ground chicken
  • 1/2 packet taco seasoning (or homemade mix: cumin, chili powder, garlic powder, paprika)
  • 1/4 cup water

For the Layers & Topping:

  • 1/2 cup refried beans (canned or homemade)
  • 1/2 cup enchilada sauce or taco sauce
  • 1/2–1 cup shredded Mexican blend cheese
  • Diced tomatoes (optional)
  • Sliced olives (optional)
  • Chopped green onions or cilantro (optional)

Instructions:

  1. Crisp the Tortillas:
    Lightly fry or air-fry the tortillas until golden and crispy on both sides. Set aside.
  2. Cook the Meat:
    In a pan, cook ground beef over medium heat. Drain excess fat, add taco seasoning + water, and simmer until thickened.
  3. Assemble:
    1. Take one crispy tortilla, spread a layer of refried beans.
    1. Add a generous spoonful of seasoned beef.
    1. Top with another crispy tortilla.
    1. Spread enchilada or taco sauce on top.
    1. Sprinkle with cheese, tomatoes, olives, or any toppings you like.
  4. Bake or Broil:
    Place the assembled pizzas on a baking tray and broil for 2–4 minutes or bake at 375°F (190°C) until the cheese is melted and bubbly.
  5. Serve:
    Slice like a pizza and serve hot with sour cream, guacamole, or salsa on the side!
