1 Point delicious muffins.. I finally tried the 1p Kodiak Protein Muffins. Why did I wait this long to try them? So good! I found variations of the recipe but this is what worked for me.
Recipe

  • 1 cup Kodiak Protein Pancake Mix (buttermilk & honey)
  • 1/2 cup water
  • 1 egg
  • 1/4 cup unsweetened applesauce
  • 1 mashed banana
  • 1 cup blueberries
    Bake 20-25 min at 375
    Makes 10 regular sized muffins
    1 point per muffin
