Strawberry and Blueberry Parfaits

These four berry parfaits layer a quick strawberry-chia mixture with whipped cottage cheese, Greek yogurt, and fresh blueberries. The strawberry layer cooks for only five minutes, then cools before assembly. For the best texture, enjoy the parfaits within a few hours.

Ingredients

  • 2 cups ripe strawberries, quartered
  • 4 tablespoons raw honey or pure maple syrup, divided
  • 1 tablespoon freshly squeezed lemon or lime juice
  • 1 teaspoon vanilla extract
  • 1/4 cup chia seeds
  • 1 cup non-fat cottage cheese
  • 1 cup Greek yogurt
  • 2 cups blueberries

Prepare and assemble

  1. Place the quartered strawberries in a small saucepan. Add 1 tablespoon of the honey or maple syrup, the citrus juice, and vanilla.
  2. Heat over medium until the mixture reaches a simmer, then stir in the chia seeds.
  3. Cook over low heat for 5 minutes. Set the strawberry mixture aside to cool.
  4. Meanwhile, blend the cottage cheese and Greek yogurt with the remaining 3 tablespoons honey or maple syrup until smooth and creamy.
  5. Divide the strawberry mixture, cheese-yogurt mixture, and blueberries among four parfait cups, layering them in that order.
  6. Refrigerate until ready to serve.

Allowing the warm strawberry mixture to cool before layering helps protect the chilled, creamy texture of the dairy mixture. Assemble shortly before serving when possible, because the parfaits are best enjoyed within a few hours of preparation.
