Peanut Butter Balls

These no-bake peanut butter balls combine oats, peanut butter, chia seeds, honey or maple syrup, and dark chocolate in an easy snack. The mixture is stirred in one bowl, chilled until manageable, and rolled by hand, so no oven is required.

Peanut butter brands vary in thickness, which can change the consistency of the mixture. Stir everything thoroughly before deciding whether it is too soft or too dry—the oats and chia seeds need a little time to absorb moisture.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 2 tablespoons chia seeds
  • 3 tablespoons honey or maple syrup
  • 1/4 cup dark chocolate, chopped or in chips

Instructions

  1. Add the rolled oats and chia seeds to a mixing bowl and stir to combine.
  2. Add the peanut butter and honey or maple syrup. Mix until the dry ingredients are evenly coated.
  3. Fold in the chopped dark chocolate or chocolate chips.
  4. Cover the bowl and chill the mixture until it is firm enough to shape.
  5. Scoop small portions and roll them between your palms to form balls.
  6. Place the finished balls on a plate or lined container and chill again before serving.

Texture and Mixing Tips

If the mixture sticks heavily to your hands, chill it longer before rolling. If it feels crumbly, continue mixing and pressing it with the back of a spoon; the peanut butter and syrup may simply need more time to spread through the oats. Avoid making large balls, as smaller portions hold their shape more easily.

Natural peanut butter can separate in the jar, so stir it well before measuring. Either honey or maple syrup can be used, but each gives the finished snack a slightly different flavor. Keep the peanut butter balls chilled in a covered container so they remain firm. Anyone with a peanut allergy should not eat this recipe.
