This creamy cucumber salad combines thin cucumber and red-onion slices with a sour-cream, dill, garlic, and vinegar dressing. It chills for at least 30 minutes before serving.
Ingredients
- 2 cucumbers
- 1 small red onion
- ½ cup fat-free sour cream
- 1 tablespoon dill
- 1 garlic clove, minced
- 1 tablespoon white wine vinegar or distilled white vinegar
- 1 teaspoon sugar
- ¼ teaspoon salt
Instructions
- Peel and thinly slice the cucumbers. Place them in a mixing bowl.
- Thinly slice the red onion and add it to the cucumbers.
- In a separate bowl, stir together the sour cream, dill, garlic, vinegar, sugar, and salt until smooth.
- Pour the dressing over the cucumbers and onion.
- Toss gently until the vegetables are evenly coated.
- Cover and refrigerate for at least 30 minutes before serving.
Preparation Notes
Keep the cucumber and onion slices thin and similar in size so the dressing reaches every piece. Stir the sugar and salt fully into the sour cream before dressing the vegetables. Serve cold and return leftovers to the refrigerator promptly.
