Ingredients:
1 low-carb, high-fiber flatbread or tortilla (such as Flat-out or Ole Xtreme Wellness – 1-2 points)
1/4 cup cooked, shredded chicken breast (0 points)
2 tablespoons sugar-free BBQ sauce (0-1 point, depending on the brand)
1/4 cup reduced-fat shredded mozzarella cheese (2 points)
1/4 small red onion, thinly sliced (0 points)
1/4 cup diced bell peppers (optional – 0 points)
Fresh cilantro or parsley for garnish (optional – 0 points)
Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C).
Prepare the Flatbread:
Place the flatbread on a baking sheet lined with parchment paper or a nonstick baking mat.
Assemble the Pizza:
Spread the sugar-free BBQ sauce evenly over the flatbread.
Sprinkle the shredded chicken breast evenly over the sauce.
Top with the red onion slices and diced bell peppers (if using).
Sprinkle the reduced-fat shredded mozzarella cheese evenly over the top.
