Ingredients (Serves 2 serving without toppings)
- 1 ripe banana (mashed)
- ½ cup non-fat cottage cheese
- 2 large eggs
- ½ cup oat flour (or blended rolled oats)
- ½ tsp baking powder
- ½ tsp vanilla extract
- ¼ tsp cinnamon (optional)
- Pinch of salt
- Butter or coconut oil (for cooking)
Optional Toppings:
Fresh banana , Greek yogurt, maple syrup , chopped nuts , or berries
Instructions
- Make Batter: Mash banana, then mix in cottage cheese, eggs, vanilla, and cinnamon. Stir in oat flour, baking powder, and salt.
- Cook Pancakes: Heat non-stick pan over medium-low. Lightly grease. Pour ¼ cup batter per pancake. Cook 2–3 min, flip, cook 1–2 more until golden.
- Serve: Stack and top with your favorites—banana, yogurt, syrup, berries, or nuts.
