Ingredients:
 1 ripe avocados, diced
 2 hard-boiled eggs, sliced
 ¼ small red onion, thinly sliced
 2 tbsp fresh parsley or dill, chopped
 1 tbsp lemon or lime juice
 Salt & black pepper to taste
 Optional: pinch of chili flakes or paprika for a little kick
