This crustless quiche combines eggs, diced ham, mozzarella, cottage cheese, and green onions. It can be baked in a sprayed muffin tin for individual portions or in a pie dish for slices.
Ingredients
- 5 eggs
- ¾ cup diced ham
- 1 cup reduced-fat mozzarella cheese, shredded
- ½ cup reduced-fat cottage cheese
- ¼ cup chopped green onions
- Salt and pepper, to taste
- Olive oil spray
Instructions
- Preheat the oven to 350°F (175°C). Coat a muffin tin or pie dish with olive oil spray.
- Whisk the eggs in a mixing bowl.
- Add the cottage cheese, diced ham, shredded mozzarella, chopped green onions, salt, and pepper. Stir until evenly combined.
- Divide the mixture among the muffin cups or pour it evenly into the pie dish.
- Bake for 25–30 minutes, until the top is lightly golden and the center is firm. After 25–30 minutes, check that the center reaches 160°F (71°C).
- Let the quiche settle briefly before lifting out individual portions or slicing the pie-dish version.
Preparation Notes
Dice the ham and chop the green onions before whisking the eggs so the mixture can go directly into the prepared pan. Stir just before portioning to keep the ham and cheese from collecting at the bottom of the bowl.
The pan choice changes the shape of the finished quiche, so rely on the center temperature as well as the lightly golden top and firm center. Cut the pie-dish version into portions suited to the meal. Refrigerate leftovers promptly in a covered container.
