Ingredients:

5 eggs

3/4 cup diced ham

1 cup reduced-fat mozzarella cheese, shredded

1/2 cup reduced-fat cottage cheese

1/4 cup chopped green onions

Salt & pepper to taste

Olive oil spray

Directions:

Preheat oven to 350°F (175°C). Spray a muffin tin or pie dish with olive oil. In a bowl, whisk eggs, then mix in cottage cheese, ham, mozzarella, green onions, salt, and pepper.

Pour the mixture evenly into your baking dish. Bake for 25–30 minutes or until the top is lightly golden and firm to the touch. These are perfect for make-ahead breakfasts or a light brunch!
