Fresh raspberries, chia seeds, and honey or maple syrup form the center of these frozen chocolate bites. Freezing the raspberry mixture until solid makes each portion easier to dip and helps the chocolate set into a neat shell. The recipe makes nine bites.
Ingredients
- 1 heaping cup fresh raspberries
- 1 tablespoon chia seeds
- 1 tablespoon raw honey or pure maple syrup
- 1 cup dark chocolate chips
Instructions
- Line a sheet pan with parchment paper and clear enough space in the freezer for the pan.
- Mash the raspberries in a shallow dish with a fork. Add the chia seeds and honey or maple syrup, then stir well.
- Spoon nine equal dollops onto the lined pan, leaving a little space between them.
- Freeze for 1 hour, or until the raspberry portions are very solid.
- Melt the chocolate chips in the microwave on high in 30-second increments, stirring after each interval. A double boiler on the stove also works.
- Dip each frozen raspberry bite into the melted chocolate and let the excess drip off. Return the bites gently to the sheet pan.
- Freeze for 20 minutes, or until the chocolate is set.
Enjoy the bites immediately after the shell sets, or keep them in a sealed freezer container for up to two months. Working with one or two frozen centers at a time can help the remaining portions stay solid during dipping.
