Ranch chicken “tostadas” serves 2 people-1 point per tostada

2-Kim’s magic pop cheddar flavor (see pic)

3-4 ounces of ground chicken breast

1 tbsp of minced onion

1 tsp of mixed garlic.

1 tbsp of chopped cilantro

1 tsp Salt free taco seasoning

1/4 tsp cumin

Salt and pepper to taste

Pinch of chili powder or to taste

Butter lettuce leaf-2 (remove excess moisture with paper towel)

1 slice of tomato chopped (remove excess moisture with paper towel)

3/4 cup of fat free refried beans (warmed in microwave with a bit of water to soften to a purée)

Fat free fresh salsa-2 tbsp

2 tbsp of fat free plain Greek yogurt

2 tbsp of fat free shredded cheddar cheese

Optional:

Homemade ranch dressing made with Greek yogurt, unsweetened almond milk, 1 tbsp of hidden valley ranch dressing, onion powder, garlic powder and dill-0 points/serving

Instructions:

In a frying pan spray avocado oil spray. Sauté the onion, cilantro and garlic. Add the ground chicken, then add taco seasoning, cumin, salt, pepper and chili powder. Mix well until chicken is cooked thru.

In a plate arrange the tostadas, place a leaf of lettuce on each, and the chopped tomatoes. Place half of the cooked chicken on each tostada, and on top place half of the refried beans in each tostada. Next, place 1 tbsp of salsa on each tostada and garnish each with one tablespoon of Greek yogurt on each and 1 tablespoon of the shredded cheese.

Drizzle homemade ranch dressing over the top of each tostada.

May add scallions to garnish.

Serve immediately.
