2 points 1-2 servings
Ingredients:
1 overripe banana (mashed)
2 eggs
1/3 cup oats (I use Publix old fashioned oats)
1 tsp vanilla
Dash of salt
1/3 cup of blueberries (I use frozen)
Optional: 1 tsp of cinnamon
Directions:
Preheat oven to 350
Mix all ingredients together except for blueberries
Fold in blueberries
Pour into a greased mini loaf pan (you can split between two if you want two 1 point portions)
Bake for 25-30 minutes
Enjoy for breakfast or save for a mid morning snack! So filling and delicious.
