Breakfast Sandwich Prep – 4 points each I usually prep about 18 of these in advance, save some for the week and freeze the rest. Well, I didn’t realize I didn’t even have 12 eggs, let alone 18. Woops. So I prepped 10 and my dog ate 2 that he stole from the counter once they were finished. Woops, again! Light English Muffin – 2 points Reduced fat american cheese – 2 points Canadian bacon – 1 slice – 0 points Egg I can’t believe it’s not butter spray S&P I do not like Velveeta slices – if you like them – you can swap the cheese and save a point! I also don’t want to bake my eggs, if you want to do that – you can probably cook most/all of them at once and save some time! I treat this like an assembly line. I get all of my items prepped before I start cooking my eggs. I spray the English muffins with the butter spray and toast in the air fryer. I brown up the Canadian bacon on both sides in a pan with cooking spray. I break my cheese up into four squares so I can pile the cheese more in the middle of the sandwich, otherwise you lose most of the cheese when it’s reheated. I fry my eggs in a pan with cooking spray and season with salt and pepper. Assemble the sandwiches, let them cool completely and wrap with parchment paper. If freezing, put in a freezer bag and squeeze the air out.
