Ingredients:

6 large eggs

1/4 cup skim milk

1/4 cup bell pepper (diced)

1/4 cup onion (diced)

1/4 cup spinach (chopped)

1/4 cup low-fat cheese (optional)

Salt & pepper to taste

Cooking spray

Instructions:

Preheat oven: Set to 350°F (175°C). Spray a muffin tin with cooking spray.

Prepare egg mixture: In a bowl, whisk eggs and skim milk. Add salt, pepper, and mix well.

Add veggies: Stir in diced bell pepper, onion, and spinach (or any veggies you like).

Fill muffin tin: Pour the egg mixture evenly into the muffin cups, about 3/4 full. Sprinkle a bit of low-fat cheese on top if desired.

Bake: Bake for 15-18 minutes, or until eggs are set and lightly golden.

Serve: Let cool for a few minutes before serving.
