Ingredients:
- 2 cups ripe strawberries, quartered
- 4 Tbsps raw honey or pure maple syrup, divided
- 1 Tbsp freshly squeezed lemon or lime juice
- 1 tsp vanilla extract
- 1/4 cup chia seeds
- 1 cup non-fat cottage cheese
- 1 cup Greek yogurt
- 2 cups blueberries
Instructions:
- Slice your strawberries into quarters and place in a small saucepan.
- Add in 1 tablespoon of the honey, fresh lemon juice, and vanilla, then heat the saucepan over medium heat.
- Bring the mixture to a simmer then stir in the chia seeds.
- Allow it to cook over low heat for 5 minutes, then set aside to cool.
- Meanwhile, using a blender, blend your cottage cheese and yogurt together with the remaining 3 tablespoons of honey until smooth and creamy.
- To assemble your parfait cups, layer each with the strawberry mixture, then the cheese yogurt mixture followed by fresh blueberries as shown.
- Refrigerate until ready to serve.
- Best enjoyed within a few hours of preparing.
