Ingredients:

  • 2 cups ripe strawberries, quartered
  • 4 Tbsps raw honey or pure maple syrup, divided
  • 1 Tbsp freshly squeezed lemon or lime juice
  • 1 tsp vanilla extract
  • 1/4 cup chia seeds
  • 1 cup non-fat cottage cheese
  • 1 cup Greek yogurt
  • 2 cups blueberries

Instructions:

  1. Slice your strawberries into quarters and place in a small saucepan.
  2. Add in 1 tablespoon of the honey, fresh lemon juice, and vanilla, then heat the saucepan over medium heat.
  3. Bring the mixture to a simmer then stir in the chia seeds.
  4. Allow it to cook over low heat for 5 minutes, then set aside to cool.
  5. Meanwhile, using a blender, blend your cottage cheese and yogurt together with the remaining 3 tablespoons of honey until smooth and creamy.
  6. To assemble your parfait cups, layer each with the strawberry mixture, then the cheese yogurt mixture followed by fresh blueberries as shown.
  7. Refrigerate until ready to serve.
  8. Best enjoyed within a few hours of preparing.
