- 2 eggs
- 1 tablespoon sugar
- ¼ cup unsweetened applesauce
- ½ cup plain 0% Greek yogurt
- ⅓ cup freshly squeezed orange juice
- 1 heaping cup flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1½ tablespoons fresh orange zest
- 1 cup fresh cranberries

Instructions
- Preheat the oven to 350°F. Coat 10 cups of a regular muffin tin with cooking spray.
- Whisk the eggs with the sugar in a bowl.
- Stir in the applesauce, Greek yogurt, and orange juice.
- Add the flour, baking powder, baking soda, and orange zest. Stir until combined.
- Fold in the cranberries.
- Divide the batter among the 10 prepared muffin cups.
- Bake for 16–18 minutes, until the tops are golden, the centers contain no wet batter, and the centers reach 160°F (71°C).
- Let the muffins cool. A little sinking can occur as they cool.
