Orange-Cranberry Greek Yogurt Muffins

Fresh orange juice and zest flavor these cranberry muffins, while applesauce and Greek yogurt add moisture. The recipe makes 10 muffins.

Ingredients

  • 2 eggs
  • 1 tablespoon sugar
  • ¼ cup unsweetened applesauce
  • ½ cup plain 0% Greek yogurt
  • ⅓ cup freshly squeezed orange juice
  • 1 heaping cup flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1½ tablespoons fresh orange zest
  • 1 cup fresh cranberries
  • Cooking spray

Instructions

  1. Preheat the oven to 350°F. Coat 10 cups of a regular muffin tin with cooking spray.
  2. Whisk the eggs with the sugar in a bowl.
  3. Stir in the applesauce, Greek yogurt, and orange juice.
  4. Add the flour, baking powder, baking soda, and orange zest. Stir until combined.
  5. Fold in the cranberries.
  6. Divide the batter among the 10 prepared muffin cups.
  7. Bake for 16–18 minutes, until the tops are golden, the centers contain no wet batter, and the centers reach 160°F (71°C).
  8. Let the muffins cool. A little sinking can occur as they cool.

Yield

Makes 10 muffins.

Storage

After the first day, keep the muffins covered in the refrigerator and use within 4 days. Cooled muffins may also be frozen.
