This vegetable soup brings cabbage, carrots, celery, tomatoes, onion, and herbs together in a simple broth. It makes eight servings and cooks in about 20 minutes after the ingredients are prepared.
Ingredients
- 8 cups vegetable broth
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 4 cups cabbage, cut into 1-inch pieces
- 3 carrots, sliced
- 3 celery stalks, sliced
- ½ teaspoon kosher salt
- ½ teaspoon coarsely ground black pepper
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- 1 (28-ounce) can diced tomatoes, undrained
Instructions
- Add the vegetable broth, onion, garlic, cabbage, carrots, celery, salt, pepper, oregano, basil, and undrained tomatoes to a large pot. Stir well.
- Bring the soup to a boil.
- Reduce the heat to low and cook for 20 minutes, or until the cabbage and carrots are tender.
