Chocolate Chip Cookies

These chocolate chip cookies use low-fat spread and fat-free fromage frais for a soft dough. The recipe makes 18 cookies.

Ingredients

  • 175 grams self-raising flour
  • 75 grams low-fat spread
  • 12 tablespoons artificial sweetener
  • 60 grams chocolate chips
  • 3 tablespoons very-low-fat or fat-free fromage frais
  • 1 egg yolk

Instructions

  1. Preheat the oven to 180°C, gas mark 4. Line a baking sheet with greaseproof paper.
  2. Sift the flour into a bowl. Add the low-fat spread and rub it in with your fingertips until the mixture resembles breadcrumbs.
  3. Add the sweetener and mix well.
  4. Stir in the chocolate chips, fromage frais, and egg yolk. Knead with your hands to form a soft dough.
  5. Divide the dough into 18 pieces and roll each piece into a ball. Arrange the balls on the prepared sheet.
  6. Lightly flatten each ball with the back of a damp fork.
  7. Bake for 12–15 minutes, until golden, with no wet dough in the centers, and the centers reach 160°F (71°C).
  8. Transfer the cookies to a wire rack and let them cool before serving.
