1 teaspoon sugar-free syrup (optional, for topping)
Non-stick cooking spray or a light drizzle of oil for greasing
Pinch of salt (optional)
Directions:
Preheat Oven: Preheat your oven to 350°F (175°C). Lightly spray a small glass baking dish (about 6×6 inch or similar size) with non-stick cooking spray.
Prepare the Banana Mixture: In a medium bowl, mash the ripe banana with a fork until smooth. Add in the egg, ground cinnamon, vanilla extract, and a pinch of salt (if desired). Mix well until everything is well combined.
Add Oats and Blueberries: Stir in the 1/3 cup dry oats, and gently fold in the blueberries. Make sure the oats are evenly distributed in the batter.
Bake the Loaf: Pour the banana-oatmeal mixture into the greased baking dish. Spread it out evenly.
Bake for 30 Minutes: Place the dish in the oven and bake for about 30 minutes or until a toothpick inserted into the center comes out clean.
Serve: Once it’s done, let it cool slightly before slicing. Serve warm with a drizzle of sugar-free syrup on top for a little extra sweetness if desired.
