Ingredients:

Wholemeal bread 1 slice(s), lightly toasted

97% fat-free cottage cheese ¼ cup(s), (60g)

Tomato(es) 2 thick slice(s)

Tomato passata 1½ tbs

Grated parmesan cheese 3 tsp

Garlic powder or flakes ¼ tsp

Dried herbs ¼ tsp, Italian

Dried chilli flakes 1 pinch, (optional)

Instructions:

  1. Preheat oven to 200°C. Line a baking tray with baking paper.
  2. Place bread on prepared tray. Spread cottage cheese onto bread and season with salt and pepper. Top with tomato slices, passata, cheese, garlic powder, Italian herbs and chilli flakes (if using). Cook in oven for about 5 minutes, or until parmesan is melted and cottage cheese is warmed through.
