This pizza toast layers cottage cheese, tomato, passata, Parmesan, garlic, and Italian herbs on one slice of lightly toasted wholemeal bread. It finishes in a 200°C oven in about five minutes.
Ingredients
- 1 slice wholemeal bread, lightly toasted
- ¼ cup (60 g) 97% fat-free cottage cheese
- 2 thick tomato slices
- 1½ tablespoons tomato passata
- 3 teaspoons grated Parmesan cheese
- ¼ teaspoon garlic powder or garlic flakes
- ¼ teaspoon dried Italian herbs
- 1 pinch dried chili flakes, optional
- Salt and pepper, to taste
Instructions
- Preheat the oven to 200°C. Line a baking tray with baking paper.
- Place the lightly toasted bread on the prepared tray.
- Spread the cottage cheese over the bread and season lightly with salt and pepper.
- Add the tomato slices and passata.
- Top with the Parmesan, garlic, Italian herbs, and optional chili flakes.
- Bake for about 5 minutes, until the Parmesan is melted and the cottage cheese is warmed through.
- Serve while hot.
Assembly Notes
Lightly toast the bread before adding the toppings so it has a firm base. Keep the tomato slices in one layer and spread the passata within the bread edges. Move the finished toast with a flat spatula because the topping will be hot.
