Apple-Cinnamon Greek Yogurt Muffins

Greek yogurt and applesauce keep these cinnamon muffins moist, while diced apple adds fruit throughout. The recipe makes 10 muffins.

Ingredients

  • 2 eggs
  • 2 tablespoons brown sugar
  • ¾ cup nonfat plain Greek yogurt
  • ⅓ cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 large apple, peeled and diced
  • Cooking spray

Optional cinnamon-sugar topping

  • ½ teaspoon sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F. Coat 10 cups of a regular muffin tin with cooking spray. Do not use paper liners because the muffins may stick to them.
  2. Whisk the eggs with the brown sugar in a bowl.
  3. Stir in the Greek yogurt, applesauce, and vanilla.
  4. Add the flour, baking powder, and cinnamon. Mix until combined, then fold in the diced apple.
  5. Divide the batter among the 10 prepared muffin cups.
  6. If using the topping, mix ½ teaspoon sugar with 1 teaspoon cinnamon and sprinkle it over the batter.
  7. Bake for 25 minutes, until the centers contain no wet batter and reach 160°F (71°C).
  8. Let the muffins cool before removing them from the tin.

Yield

Makes 10 muffins.

Storage

Keep cooled muffins covered in the refrigerator and use within 4 days. For longer storage, freeze them after 2–3 days.
