Ingredients

For the meatloaf

  • 1½ pounds raw extra-lean ground beef
  • ½ cup diced bell peppers
  • ½ cup diced onion
  • ½ cup panko breadcrumbs

  4. Shape the mixture into a log about 10 inches long on the prepared sheet.
  5. Bake for 55 minutes.
  6. Remove the meatloaf from the oven. Spoon 2 tablespoons pizza sauce over the top, then add ¼ cup mozzarella, the 15 whole pepperoni slices, and a light sprinkle of Italian seasoning.
  7. Return it to the oven for 15–20 minutes, until the center reaches 160°F (71°C).
