Ingredients:

2 cups reduced-fat cottage cheese

1 cup reduced-fat shredded cheddar cheese

2 large eggs

1 cup chopped spinach

1/2 cup diced bell peppers

1/2 cup chopped zucchini

1/2 cup chopped onion

1/2 tsp garlic powder

1/2 tsp paprika

Salt and pepper to taste

1/4 cup breadcrumbs (optional for topping)

Instructions:

Preheat oven to 375°F (190°C). Grease a baking dish.

In a large bowl, mix cottage cheese, cheddar cheese, eggs, spinach, bell peppers, zucchini, onion, garlic powder, paprika, salt, and pepper.

Pour the mixture into the prepared baking dish.

Top with breadcrumbs if desired.

Bake for 25–30 minutes until the top is golden and set.

Let cool slightly before slicing and serving.
