🌮 Weight Watchers Mexican Chicken Casserole
Ingredients
- 1 lb lean ground chicken or ground turkey
- 1 bag frozen peppers and onions blend
- 2 (10 oz) bags cauliflower rice
- 1 can fire-roasted diced tomatoes
- 1 can taco sauce
- 2 cans black beans, drained and rinsed
- 2 cans Mexican corn, drained
- 2 small cans diced green chiles
- Taco seasoning, to taste
- Garlic powder
- Onion powder
- Cumin
- Chili powder
- Salt and pepper
- 3 tablespoons Walden Farms Street Taco Queso Sauce
- 1–1½ cups reduced-fat shredded Mexican cheese for topping
Instructions
- Preheat oven to 375°F (190°C).
- Cook the ground chicken in a large skillet until fully cooked.
- Add taco seasoning and the peppers and onions. Cook for 5 minutes.
- Stir in cauliflower rice, tomatoes, taco sauce, black beans, corn, and green chiles.
- Season with cumin, garlic powder, onion powder, chili powder, salt, and pepper.
- Simmer everything together for 8–10 minutes.
- Transfer the mixture into a large casserole dish or divide between meal-prep containers.
- Top with reduced-fat Mexican cheese.
- Bake for 10–15 minutes, until the cheese is melted and bubbly.
- Drizzle with the queso sauce before serving.
