Ingredients:

1 cup non-fat cottage cheese

4 large eggs

1/2 cup shredded cheese (cheddar, mozzarella, or your choice)

1/4 cup chopped green onions or chives (optional)

Salt and pepper to taste

Optional add-ins: diced bell peppers, spinach, tomatoes

Directions:

1. Preheat oven to 375°F (190°C) and grease a small baking dish.

2. Whisk together non-fat cottage cheese, eggs, shredded cheese, and green onions (if using). Season with salt and pepper.

3. Pour mixture into the prepared dish and spread evenly.

4. Bake for 25-30 minutes until eggs are set and slightly golden.

5. Let cool briefly before slicing and serving.
