Low-Point Southern Vanilla Pecan Pralines
Prep time: 5 mins | Cook time: 10 mins | Yield: 16 small pralines
Estimated WW Points: ~2–3 Points per praline
Ingredients
Pecans: 1 cup pecan halves (chopped or whole)
Sugar Substitute: 1 cup granular brown sugar alternative (such as Swerve Brown, Lakanto Golden, or Truvia Sweet Complete)
Butter: 2 tablespoons unsalted light butter (or standard butter)
Milk/Cream: ¼ cup unsweetened almond milk (or evaporated fat-free milk for added richness)
Vanilla: 1 teaspoon pure vanilla extract
Salt: 1 pinch fine sea salt
Optional Binder: ¼ teaspoon xanthan gum (helps replicate the thick, soft fudge texture without real sugar)

Instructions

  1. Prep the Tray: Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Combine Base: In a heavy-bottomed saucepan over medium heat, stir together the brown sugar substitute, butter, almond milk (or fat-free evaporated milk), and a pinch of salt.
  3. Simmer: Bring the mixture to a gentle boil, stirring continuously. Let it simmer for 3–4 minutes until the sweetener completely dissolves and the liquid starts to thicken.
  4. Add Vanilla & Pecans: Remove the pan from the heat. Quickly stir in the vanilla extract, xanthan gum (if using), and pecan halves.
  5. Beat & Spoon: Beat the mixture vigorously with a wooden spoon for 1–2 minutes until it loses its high gloss and begins to thicken slightly.
  6. Set: Drop tablespoon-sized mounds onto the prepared parchment paper. Top each with an extra pecan half if desired.
  7. Cool: Allow them to cool completely at room temperature for 20–30 minutes until set and firm.
    Key Tips for Success
Sugar Substitutes behave differently: Real sugar caramelizes and hardens at specific temperatures (234^\circ\text{F} – 240^\circ\text{F}). Erythritol/Monkfruit blends set slightly softer, so letting them cool completely (or popping them in the fridge for 10 minutes) helps them firm up.
Point Control: Because pecans carry most of the healthy-fat calories/points, keeping the portion size to 1 tablespoon per praline keeps the points low while giving you all the classic Southern flavor
