Chicken Tortilla Roll-Ups

These chilled chicken tortilla roll-ups combine cooked chicken, cream cheese, sour cream, cheddar, bell pepper, green onions, and spices. Four tortillas make four to six servings after the logs are chilled and sliced.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup non-fat cream cheese, softened
  • 1/2 cup non-fat sour cream
  • 1 cup reduced-fat shredded cheddar cheese
  • 1/2 cup diced bell peppers, any color
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 4 large flour tortillas
  • Fresh cilantro leaves, optional garnish

Instructions

  1. Mix the chicken, cream cheese, sour cream, cheddar, bell pepper, green onions, garlic powder, onion powder, paprika, salt, and pepper until fully combined.
  2. Lay out the tortillas. Spread the filling evenly over each one, leaving a small border around the edge.
  3. Roll each tortilla tightly into a log.
  4. Wrap the logs in plastic wrap and refrigerate for at least 30 minutes to firm.
  5. Unwrap and slice into bite-size pieces.
  6. Arrange on a platter, garnish with cilantro if desired, and serve chilled.

Use cooked chicken that has been kept refrigerated, and return the roll-ups to the refrigerator until serving.
