Ingredients
- 1 (8-ounce) container fat-free whipped topping, such as Cool Whip Free
- 1 (20-ounce) can crushed pineapple in 100% juice, undrained
- 1 (1-ounce) package sugar-free instant vanilla pudding mix
- Optional add-ins: mini marshmallows, chopped walnuts or pecans, shredded coconut, or maraschino cherries
Instructions
- Place the crushed pineapple and all of its juice in a large bowl.
- Add the dry instant pudding mix and stir until the mixture begins to thicken.
- Gently fold in the whipped topping until fully combined and fluffy.
- Cover and refrigerate for at least 30 minutes to set and chill.
- Divide into about six servings.
- Add mini marshmallows, nuts, coconut, or maraschino cherries if desired.
Do not drain the pineapple, because its juice supplies the liquid for the instant pudding mix. Fold the whipped topping gently to retain the airy texture, and keep the dessert chilled until serving.
