Parmesan-Dijon Baked Pork Chops

Dijon mustard, olive oil, Italian seasoning, and Parmesan form a savory coating for these center-cut pork loin chops. The recipe makes four servings.

Ingredients

  • 1 tablespoon Dijon mustard
  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon Italian seasoning
  • 4 center-cut pork loin chops (6 ounces each)
  • Salt and black pepper, to taste
  • ½ cup shredded Parmesan cheese
  • Cooking spray

Instructions

  1. Preheat the oven to 400°F. Coat a baking sheet with cooking spray.
  2. In a bowl, mix the Dijon mustard, olive oil, and Italian seasoning.
  3. Season the pork chops with salt and black pepper.
  4. Brush both sides of each chop with the mustard mixture, then sprinkle both sides with Parmesan.
  5. Arrange the chops on the prepared sheet.
  6. Bake for about 15 minutes, until the centers reach 145°F (63°C).
  7. Rest the pork chops for at least 3 minutes before serving.
