- 4 center-cut pork loin chops (6 ounces each)
- Salt and black pepper, to taste
- ½ cup shredded Parmesan cheese

Instructions
- Preheat the oven to 400°F. Coat a baking sheet with cooking spray.
- In a bowl, mix the Dijon mustard, olive oil, and Italian seasoning.
- Season the pork chops with salt and black pepper.
- Brush both sides of each chop with the mustard mixture, then sprinkle both sides with Parmesan.
- Arrange the chops on the prepared sheet.
- Bake for about 15 minutes, until the centers reach 145°F (63°C).
