Ingredients:
1 box (1 oz) sugar-free pistachio instant pudding mix
1 can (20 oz) crushed pineapple in 100% juice (do not drain)
1 can (11 oz) mandarin oranges in juice, drained
1 tub (8 oz) fat-free whipped topping (like Cool Whip Free)
1 cup fat-free plain Greek yogurt (optional for extra creaminess & protein)
Mini marshmallows (optional, about 1 cup – adds points)
Instructions:
In a large mixing bowl, combine the crushed pineapple with juice and the pistachio pudding mix. Stir until the pudding dissolves and the mixture thickens.
Gently fold in the whipped topping (and Greek yogurt if using) until smooth and fluffy.
Add the drained mandarin oranges and fold carefully so they don’t break apart too much.
If you like extra texture, fold in mini marshmallows.
Cover and refrigerate at least 1–2 hours before serving so it sets and flavors blend.
Serve chilled in small bowls or cups.
 Weight Watchers Notes:
Using sugar-free pudding mix and fat-free whipped topping keeps points very low.
Most fruit (pineapple & mandarin oranges in juice, not syrup) are 0 points.
Mini marshmallows will add points, so leave them out if you want to keep it extra light.
On most WW plans, this comes out to about 2–3 points per serving (if made without marshmallows).
