Ingredients (Serves 2 serving without toppings)

  • 1 ripe banana (mashed)
  • ½ cup non-fat cottage cheese
  • 2 large eggs
  • ½ cup oat flour (or blended rolled oats)
  • ½ tsp baking powder
  • ½ tsp vanilla extract
  • ¼ tsp cinnamon (optional)
  • Pinch of salt
  • Butter or coconut oil (for cooking)

Optional Toppings:
Fresh banana , Greek yogurt, maple syrup , chopped nuts , or berries

Instructions

  1. Make Batter: Mash banana, then mix in cottage cheese, eggs, vanilla, and cinnamon. Stir in oat flour, baking powder, and salt.
  2. Cook Pancakes: Heat non-stick pan over medium-low. Lightly grease. Pour ¼ cup batter per pancake. Cook 2–3 min, flip, cook 1–2 more until golden.
  3. Serve: Stack and top with your favorites—banana, yogurt, syrup, berries, or nuts.
